Best Sourdough Bread in Guatapé
Baked from scratch every morning with a 200-year-old sourdough starter.
The oldest artisanal bakery in Guatapé — on the malecón.

Real Sourdough. Not Imitation.
Most sourdough in Colombia is sourdough in name only — a touch of vinegar in a standard loaf. Ours is not that.
Our starter is over 200 years old. It has been kept alive, fed, and carried forward through generations. When you eat our sourdough, that history is in the bread.
We ferment long and slow and bake fresh every morning. The result is a proper crust, an open crumb, and the depth of flavour that only comes from time — and a very old culture.
Available whole or sliced. Ask about loaf availability when you arrive, or message us on WhatsApp the night before.
What Makes It Real Sourdough
Sourdough is a process, not a flavour additive. It starts with a live culture of wild yeast and bacteria, fed and maintained over time. Ours has been alive for over 200 years.
That age matters. An older starter has a more complex, stable microbial community — which means more consistent fermentation, deeper flavour, and better structure in the final loaf.
We have been baking with it at Casa de Ciclistas longer than any other bakery in Guatapé. The starter is alive. The bread is made fresh every morning. That is the whole story.
